    Ingredients

    Amounts for
    • 130g vegan protein powder
    • 95g ground almonds
    • 60g plain flour
    • ¼ tsp salt
    • 2 tsp baking powder
    • ½ tsp bicarbonate of soda
    • 15g ground flaxseed
    • 600ml soya milk
    • 1 tsp vanilla extract
    • 2 tbsp maple syrup
    • 1 tsp cider vinegar
    • 2 tsp ground cinnamon
    • 2 tbsp vegetable oil, for greasing the pan

    Method

    1. Whisk the protein powder, ground almonds, flour, salt, baking powder, bicarbonate of soda and flaxseed together in a large bowl.

    2. Add the soya milk, maple syrup, vanilla, cinnamon and vinegar. Mix with a spatula until no dry flour is left. The batter will be thicker than a usual pancake batter.

    3. Heat a frying pan over a medium heat and brush it with a little oil. Add 80ml of batter and spread it into a round with the back of a spoon.

    4. Cook until the edges look dry and the underside is golden. These take about twice as long to set as ordinary pancakes, so lift a corner to check before you flip.

    5. Flip carefully and cook the second side until golden. Repeat with the rest of the batter, adding a little oil to the pan each time. Serve 4 pancakes a portion.
