    Ingredients

    • 150g silken tofu (drained weight)
    • 30g gram flour, chickpea flour
    • 6 tsp nutritional yeast
    • 150ml soya milk
    • ¼ tsp turmeric
    • ½ onion, finely diced
    • 2 cloves of garlic, finely diced
    • 110g cherry tomato, halved
    • 10g fresh basil, leaves picked
    • ⅔ tbsp olive oil
    • 1 slice of sourdough bread, toasted, to serve

    Method

    1. Chop garlic and onion small. Halve each cherry tomato. Pick basil leaves from their stems.

    2. Warm half the oil in a frying pan over high heat. Soften onion for 4 minutes, until golden at its edges.

    3. Tip in garlic, tomatoes, basil and some salt. Stir 2-3 minutes, until tomatoes slump. Set aside.

    4. Beat tofu, gram flour, nutritional yeast, soya milk and turmeric together for 1 minute. Aim for a lump-free batter, runny enough to pour.

    5. Grease a nonstick pan with remaining oil over low heat. Add batter, tilting so it spreads edge to edge.

    6. Leave untouched 5 minutes, until golden underneath and firm enough to lift.

    7. Spoon tomatoes onto one side, then fold in half. Serve with sourdough toast.
