    Ingredients

    Amounts for
    • 5 tbsp Greek yoghurt
    • ⅔ lemon, zested, then cut into wedges
    • 2 tsp harissa paste
    • 2 tbsp za'atar
    • 30g plain flour
    • 220g halloumi, cut into fries
    • 320ml vegetable oil, for shallow frying

    Method

    1. For the dip, grate the lemon zest into the yoghurt, season, then fold in the harissa with only a couple of turns, so it stays marbled.

    2. Combine the flour and za'atar on a plate. Toss the halloumi sticks through until each one is dusted.

    3. Pour the oil into a deep, heavy frying pan and bring it to 180°C. A pinch of flour should sizzle at once.

    4. Fry a few sticks at a time for 2 minutes, turning, until crisp and deep gold. Lift onto kitchen paper.

    5. Finish with a little more za'atar. Cut the lemon into wedges and serve them with the fries and dip.
