    Ingredients

    Amounts for
    • 440g mushrooms, cut into bite-sized pieces
    • 4 cloves of garlic, peeled and finely diced
    • 55g plant butter
    • 20g fresh chives, snipped
    • 85ml oat cream
    • 2 slices of sourdough bread, thick slices
    • 10g spreadable plant butter, for the toast

    Method

    1. Start with the prep. Snip the chives and chop the garlic finely. Small mushrooms can stay whole, but cut larger ones down to bite size.

    2. Keep the hob at medium-low so the plant butter melts gently in a large frying pan and does not catch. Give the garlic 1 minute in it, stopping before it colours.

    3. Season the mushrooms as they go in. Cook for 6-7 minutes in all: keep them moving, and once 3 minutes have passed, raise the heat to medium.

    4. With 2 minutes left on the mushrooms, put the sourdough on to toast. Spread it with the spreadable plant butter as soon as it is done.

    5. Pour the oat cream in off the heat, then stir most of the chives through. Bring it back to a medium heat and let it just start to bubble.

    6. Pile everything onto the toast, with the rest of the chives on top.
