    Ingredients

    Amounts for
    • 260g artichoke hearts (drained weight)
    • 1 ½ avocados, stoned and scooped
    • 1 tbsp lime juice
    • 4g fresh basil, leaves picked
    • 8 slices of sourdough bread, thick slices
    • 8 eggs
    • 60g rocket, to garnish

    Method

    1. Tip the basil, lime juice, avocado and artichoke hearts into a blender. Blitz to a smooth purée, then season it to taste with salt and pepper.

    2. Toast each slice of sourdough.

    3. Pour water into a shallow, wide pan until it is a third full. On the hob, bring it up until it is barely simmering.

    4. Crack the eggs into separate bowls, one each. Working clockwise round the pan, slide them in one at a time so you know the order they went in.

    5. Poach them until set, with firm, opaque whites. Using a slotted spoon, lift each egg out and drain it.

    6. Cover each piece of toast with an even layer of the purée.

    7. Serve straight away, each slice topped with a poached egg and a scattering of rocket.
