Ingredients
- 220g cottage cheese
- 2 eggs
- 100g rolled oats
- 2 tsp ground cinnamon
- 2 tsp baking powder
- 2 tsp vanilla extract
- 10g butter, for the pan
Method
Tip the oats, cottage cheese, eggs, cinnamon, baking powder and vanilla into a blender. Blitz for about 30 seconds, only until smooth, then let the batter stand for 5 minutes to thicken.
Warm a large non-stick frying pan over a low-medium heat and melt a little of the butter in it.
Spoon in 60ml of batter per pancake, leaving space between them. Cook for 3-4 minutes, until risen and set on top. Expect few bubbles with this batter.
Flip and cook for 1-2 minutes more, until golden underneath. Repeat with the rest, adding more butter to the pan as needed.
