    Ingredients

    Amounts for
    • 390g sweetcorn (drained weight)
    • 30g plain flour
    • 2 tbsp polenta
    • ½ tsp baking powder
    • 1 tbsp cornflour
    • 1 egg
    • 2 tbsp double cream
    • 75g feta cheese, crumbled
    • 3 stems of spring onion, sliced
    • 8 tbsp sunflower oil, for frying

    Method

    1. Make the batter in one bowl. Combine the cornflour, baking powder, polenta and plain flour with some salt and pepper, then work in the egg and double cream until the mixture forms a thick, smooth paste.

    2. Fold the spring onion, feta and drained sweetcorn through the batter so they are spread evenly and every fritter gets some of each.

    3. Put a large frying pan on the hob over a medium-high heat and let the sunflower oil get hot before any batter goes in.

    4. Fry the fritters 3-4 at a time so the pan isn't crowded. Spoon in the mixture and flatten each one with a spatula to 1cm thick. Each batch needs 3 minutes, then a flip and 2-3 minutes more, until both sides are golden.

    5. Lift them onto kitchen paper to drain. Season lightly and serve while warm.
