Tikka prawn, spinach & tomato curry
Jarred tikka paste does the spice work, and fresh tomatoes cook down into a light sauce in minutes. The prawns go in last, so they stay tender.

Ingredients
- 1 ½ tbsp vegetable oil
- 2 ¾ onions, cut into wedges
- 700g tomato, roughly chopped
- 30g fresh ginger, grated
- 6 cloves of garlic, crushed
- 3 tbsp tikka masala paste
- 560g king prawns, raw, shelled
- 350g spinach
- 300g basmati rice, to serve
Method
Boil basmati rice in plenty of water for 10-12 minutes, until tender, then drain. Cook only the rice for the portions you're eating now, and cook it fresh when you eat the leftovers.
Meanwhile, warm oil in a large frying pan over medium heat. Cook onion wedges for 5 minutes, until softened and catching at their edges.
Stir in tikka paste, ginger and garlic and let them sizzle for 30 seconds, until fragrant.
Add tomatoes. Turn heat up high and cook, stirring often, for 5-6 minutes, until they collapse into a thick sauce.
Add prawns with spinach and simmer for 3-4 minutes, until prawns are pink and leaves have wilted. Spoon over rice to serve.
