    Ingredients

    Amounts for
    • 250g potato, sliced
    • 160g green beans, trimmed
    • 2 ¾ salmon fillets
    • 80g salad leaves
    • 3 clementines, sliced
    • 10g fresh basil, chopped
    • 10g fresh coriander, chopped
    • 2 tsp sesame oil
    • 2 tsp soy sauce
    • 1 tbsp lemon juice
    • 1 red chilli, deseeded and chopped
    • ¼ onion (25g), finely chopped
    • 1 clementine, juiced, for the dressing

    Method

    1. Bring some water to the boil in a pan on the hob and set a steamer basket on top. Steam the green beans and potato slices in it together for 8 minutes.

    2. Lay the salmon over the vegetables and steam for 6-8 minutes more, until a fork pressed into it makes the fish flake easily.

    3. While the fish steams, make the dressing: squeeze the juice from the clementines for the dressing and whisk it with the onion, chilli, lemon juice, soy sauce and sesame oil. Slice the other clementines.

    4. Lay the clementine slices, warm potatoes and beans over a bed of salad leaves on each plate.

    5. Finish each plate with the salmon, a scattering of chopped coriander and basil, and the dressing spooned over the lot.
