    Ingredients

    Amounts for
    • 600g gnocchi
    • 17 stems of broccolini, ends trimmed, cut into large pieces
    • 460g cherry tomato
    • ¾ red onion, thinly sliced
    • 2 ¾ cloves of garlic, sliced
    • 3 ¼ tbsp olive oil
    • ¾ tsp fresh thyme, leaves picked
    • ¾ tsp za'atar
    • ⅓ tsp chilli flakes
    • 240g feta cheese, torn into chunks

    Method

    1. Get the oven heating to 230°C (fan 210°C) and lay a sheet of baking paper on a large rimmed tray.

    2. Put the garlic, red onion, cherry tomatoes, broccolini and gnocchi in a large bowl. Season with salt and pepper, add the chilli flakes, za'atar, thyme and olive oil, and toss.

    3. Tip it all onto the tray, spread it out evenly and give it 10 minutes in the oven.

    4. Give everything a stir, then tear the feta over it. Roast for another 15-20 minutes, until the feta is browned in patches and the gnocchi is crisp at the edges but tender inside.

    5. Check the seasoning, then take the tray straight to the table.
