    Ingredients

    Amounts for
    • 400g orecchiette
    • 1 tbsp olive oil
    • 2 red chillies, deseeded and finely chopped
    • 2 cloves of garlic, crushed
    • 240g butter beans (drained weight), rinsed
    • 400g tinned tomatoes
    • 1 lemon, zested and juiced
    • 30g fresh parsley, finely chopped
    • 25g Parmesan, grated
    • 160g spinach

    Method

    1. Cook the orecchiette in a large pan of salted boiling water on the hob until al dente. Before draining, scoop out a mugful of the pasta water and keep it to one side.

    2. Set a wide frying pan on a medium heat while the pasta cooks, and warm the olive oil in it. Stir in the chilli and garlic and cook for 1 minute, until fragrant but not coloured.

    3. Tip in the tinned tomatoes and butter beans and simmer for 8 minutes. Crush some of the beans against the side of the pan as they cook, to thicken the sauce.

    4. Add the drained orecchiette and the spinach to the sauce with a splash of the saved pasta water. Toss until the spinach wilts and the sauce clings to every piece.

    5. Take the pan off the heat and stir through the lemon zest and juice and the parsley. Serve with the parmesan scattered over, if you like.
