    Skillet lasagna

Lasagna built in one pan: beef and marinara simmered with broken sheets, then finished under a lid of three cheeses. All the comfort, none of the layering.

    Ingredients

    Amounts for
    • 1 tbsp olive oil
    • 1 ½ onions, finely chopped
    • 3 cloves of garlic, minced
    • 460g beef mince
    • 790g marinara sauce
    • 9 lasagna sheets, broken into pieces
    • 100ml water
    • 50g Parmesan cheese, grated
    • 130g ricotta cheese
    • 170g mozzarella cheese, shredded

    Method

    1. Turn the oven on to 220°C (fan 200°C) so it is hot by the time the pan goes in.

    2. Pick a large frying pan that can also go in the oven, and warm the oil in it on the hob over a medium heat. Soften the onion and garlic for 4 minutes.

    3. Add the beef mince, breaking it up with a spoon as it browns. Pour away any excess fat.

    4. Pour the marinara sauce over the mince and stir it through. Snap the lasagna sheets into pieces as you drop them in, turning each one until the sauce covers it. Add the water, then press everything down so the top is level.

    5. Finish with three cheeses: a scattering of parmesan, spoonfuls of ricotta dotted over the surface, and the mozzarella on top to cover.

    6. Bake in the oven for 15 minutes, until the top is golden and bubbling.

    7. Give it 10 minutes out of the oven to rest, then dish up.
