    Ingredients

    Amounts for
    • 2 ¼ tsp olive oil
    • 350g chicken sausage, sliced
    • 470g gnocchi
    • 440ml sun-dried tomato sauce
    • 100ml water
    • 150g spinach
    • 8g fresh basil, chopped
    • 50g Parmesan cheese, shaved

    Method

    1. Heat the olive oil in a large deep frying pan over a medium-high heat. Add the sliced chicken sausage and cook for 4-5 minutes, until browned at the edges.

    2. Tip in the gnocchi and cook for 2-3 minutes, stirring, so it picks up a little colour.

    3. Pour in the sun-dried tomato sauce and the water. Stir well, bring to a simmer, then cover and cook for 5 minutes until the gnocchi is tender.

    4. Add the spinach a handful at a time, stirring until it wilts into the sauce.

    5. Stir through the fresh basil and season to taste. Scatter the parmesan cheese over the top and serve straight from the pan.
