    Ingredients

    • ½ avocado, peeled and mashed
    • 1 tsp lemon juice
    • 1 bagel, split in half
    • 1 tbsp cranberry sauce
    • 50g cooked turkey, sliced
    • 80g bacon
    • 20g spinach, baby leaves
    • 50g tomato, sliced

    Method

    1. Cook the bacon in a frying pan on the hob at a medium heat, with no oil, because it gives off its own fat. Turn it after about 3 minutes and give the other side the same, until crisp. Lift it onto kitchen paper to drain.

    2. Add the lemon juice to the avocado with a pinch of salt, and mash until smooth.

    3. Split the bagel. Spread cranberry sauce on the cut side of one half and avocado on the other.

    4. Build the bagel on its avocado half: turkey first, then bacon, tomato slices and spinach leaves. Put the cranberry half on top, wrap the bagel and keep it in the fridge until you need it.
