    Ingredients

    • 1 large tortilla
    • 4 tbsp garlic herb soft cheese
    • 50g Cheddar cheese, grated
    • 1 stem of spring onion, sliced lengthways into thick strips
    • ½ lemon, zested
    • 4g fresh parsley, chopped
    • 100g cooked chicken, chopped into bite-sized pieces
    • 1 tbsp panko breadcrumbs
    • 20g spinach

    Method

    1. Heat a dry non-stick pan on the hob at medium-high. Use half the garlic herb soft cheese to cover one side of the tortilla, up to the middle, then lay it flat in the pan.

    2. Build the filling on the cheese-covered side: cheddar first, then the spinach, chicken, parsley, lemon zest and spring onion. Finish with a scatter of panko and small dots of the soft cheese you kept back.

    3. Close it up by folding the empty side across the filling, and leave it to cook for 3-4 minutes. Once the chicken is hot all the way through and the cheese inside has melted, slide it out and cut it into slices.
