    Ingredients

    Amounts for
    • 400g chickpeas (drained weight), rinsed
    • 1 red onion, roughly chopped
    • 1 clove of garlic, chopped
    • 15g fresh parsley
    • 1 tsp ground cumin
    • 1 tsp ground coriander
    • ½ tsp harissa paste
    • 2 tbsp plain flour
    • 2 tbsp sunflower oil
    • 4 pitta breads, toasted
    • 200g tomato salsa, to serve
    • 120g salad leaves, to serve

    Method

    1. Put the chickpeas, red onion, garlic, fresh parsley, ground cumin, ground coriander and harissa paste into a food processor. Season well.

    2. Blitz to a coarse paste: it should hold together but still have some texture. Scrape down the sides once or twice.

    3. Tip into a bowl and stir through the plain flour. Shape the mixture into patties with wet hands.

    4. Heat the sunflower oil in a frying pan over a medium heat. Fry the patties for 3 minutes on each side, until golden and crisp.

    5. Warm and split the pitta bread. Fill with the falafel burgers, the tomato salsa and the salad leaves.
