    Ingredients

    Amounts for
    • 930g cauliflower, cut into bite-size florets
    • 2 ¼ tbsp olive oil
    • ½ tsp ground cumin
    • ½ tsp ground coriander
    • ½ tsp turmeric
    • ½ tsp garlic granules
    • 4 pitta breads
    • 4 tbsp tahini
    • 2 tbsp lemon juice
    • 120g salad leaves

    Method

    1. Heat the oven to 220°C (fan 200°C).

    2. Whisk the ground cumin, ground coriander, turmeric and garlic granules together in a small bowl with a good pinch of salt and some black pepper.

    3. Toss the cauliflower florets with the olive oil in a large bowl until well coated, then add the spice mix and toss again.

    4. Spread the cauliflower over a lined baking tray in a single layer. Roast for 25 minutes until golden at the edges and tender.

    5. Meanwhile, whisk the tahini with the lemon juice and enough cold water to make a pourable sauce, and season to taste.

    6. Warm the pitta bread, then fill with the roasted cauliflower and salad leaves and spoon over the tahini sauce.
