    Ingredients

    Amounts for
    • 570g chicken breast, sliced into strips
    • 11 tbsp Greek yoghurt, for the marinade
    • 1 ½ tbsp lemon juice
    • 4 ½ cloves of garlic, minced
    • ⅔ tsp ground cinnamon
    • ⅔ tsp dried oregano
    • ⅓ tsp ground nutmeg
    • ⅓ tsp ground cloves
    • 17 tbsp Greek yoghurt, for the sauce
    • ⅓ tsp dried dill
    • 150g lettuce, washed and chopped
    • 150g cucumber, sliced
    • 2 ¾ tomatoes, sliced
    • ⅓ red onion, finely sliced
    • 300g basmati rice, dry

    Method

    1. Mix the marinade: the Greek yoghurt for the marinade, lemon juice, most of the minced garlic, ground cinnamon, dried oregano, ground nutmeg, ground cloves and a good pinch of salt.

    2. Slice the chicken breast into strips about 2cm thick and turn it through the marinade until well coated. Cover and refrigerate for at least 4 hours, or overnight.

    3. Make the sauce: stir the remaining Greek yoghurt with the last of the garlic, the dried dill and a pinch of salt. Keep it chilled.

    4. Cook the basmati rice according to the packet, then leave it to cool.

    5. Cook the marinated chicken in a hot griddle or heavy frying pan, turning once, until charred at the edges and cooked through. Rest for a few minutes, then slice.

    6. Chop the lettuce and slice the cucumber, tomato and red onion.

    7. Build the bowls: rice, then chicken, then the salad. Pack the garlic yoghurt sauce separately and spoon it over when you eat.
