    Scottish steel-cut porridge

Pinhead oats simmered slowly in salted water until they turn creamy, finished with a pour of cream. The plain, patient version, and the better one.

    Ingredients

    • 450ml water
    • 80g steel-cut oats
    • 3 ½ tbsp single cream

    Method

    1. Put the water and steel-cut oats in a small pan on the hob, add a good pinch of salt and bring to the boil.

    2. Lower the heat and let it simmer for 20-25 minutes, stirring often. Stop when the oats are as soft as you like them, then taste and add more salt if it needs it.

    3. Spoon it into a bowl, pour the single cream over the top and eat it straight away.
