    Ingredients

    Amounts for
    • 14 tbsp Greek yoghurt
    • 1 ½ tsp fresh ginger, grated to a paste
    • 1 ½ cloves of garlic, crushed to a paste
    • ½ tsp turmeric
    • 1 ½ tsp salt
    • 1 tbsp chilli powder
    • 1 tsp garam masala
    • 1 tbsp dried fenugreek leaves
    • 1 tbsp lemon juice
    • 770g paneer, cut into 2.5cm cubes
    • 1 ¾ red peppers, cut into 2.5cm pieces
    • 1 ¾ green peppers, cut into 2.5cm pieces
    • 1 ¾ red onions, cut into 2.5cm pieces
    • 1 ¾ tbsp vegetable oil

    Method

    1. Make the marinade: whisk the lemon juice, garam masala, chilli powder, turmeric, salt, garlic and ginger into the yoghurt. Crush the fenugreek leaves between your palms and stir them through.

    2. Coat the paneer, red onion, red pepper and green pepper in it, cover, and leave for 30 minutes, or up to 24 hours chilled.

    3. Push the pieces onto skewers, alternating cheese with peppers and onion, leaving a little room at each end.

    4. Get a griddle pan hot over a medium-high heat and grease it with some of the oil. Cook the skewers in batches so the pan is not crowded, brushed with a little more oil and pressed flat with a spatula.

    5. Give each side 5 minutes, until striped with char. Keep going until all the skewers are cooked.
