    Ingredients

    Amounts for
    • 6 fish fingers
    • 180g frozen peas
    • ½ tbsp rapeseed oil
    • 1 tbsp lemon juice
    • 2 wholemeal tortilla wraps
    • 2 carrots, coarsely grated
    • 1 ½ cornichons, sliced
    • 6g fresh mint, leaves picked

    Method

    1. Cook the fish fingers first, under the grill or in the oven, for as long as the pack says.

    2. While they cook, give the peas 3 minutes on the hob in a pan of boiling water, then drain.

    3. Tip the drained peas into a jug with the mint, lemon juice and rapeseed oil, and use a hand blender to whizz them smooth. Taste it and season with salt and pepper. For a sharper purée, squeeze in a little extra lemon juice.

    4. Heat the tortillas through first, so they don't crack when you roll them. Smooth the purée over each one, sprinkle on the carrot and finish with the cornichons and fish fingers. Roll them up and eat them before they cool.
