    Ingredients

    Amounts for
    • 670g potato, larger ones halved
    • 3 tbsp rapeseed oil
    • 1 tbsp fresh parsley, freshly chopped

    Method

    1. Set the oven to 220°C (fan 200°C).

    2. Halve any big potatoes and cover them all with cold water in a saucepan, which helps them cook evenly. Once it boils on the hob, turn the heat down and give them 15-20 minutes at a simmer, until tender enough for a knife to slide straight through. Leave them in a colander to drain well.

    3. Take a large metal tray and brush a third of the rapeseed oil over it.

    4. Once the potatoes are on the tray, press each one flat with a masher, or with the underside of a spoon. Leave the edges rough and broken: those are the bits that go crispest.

    5. Brush the remaining oil over them, then season generously with salt and pepper.

    6. Give them 20-25 minutes in the oven, until golden and crisp.

    7. Eat them hot, with the parsley scattered over.
