Ingredients
- 100g cashews, raw and unsalted
- 240g Medjool dates, pitted
- 5 tbsp cocoa powder, unsweetened
- 1 tsp hemp seeds
Method
Soak the cashews in a little water for 10 minutes.
Tip the cashews and their soaking water into a food processor with the dates, cocoa powder and hemp seeds. Blitz for about 2 minutes, until the mixture comes together as a firm dough.
Dampen your hands and roll the dough into walnut-sized balls, roughly 3cm across. Roll them in a little extra cocoa if you like.
Chill for 15-20 minutes to firm up before serving. Keep them in the fridge, or freeze them in a sealed bag.
