    Ingredients

    Amounts for
    • 300g jumbo oats
    • 1.6l water
    • 800g butternut squash, peeled and cubed
    • 1 tbsp soy sauce
    • 10g fresh ginger, grated
    • 2 stems of spring onion, sliced, to serve
    • toasted sesame oil to taste, to drizzle

    Method

    1. Put the butternut squash, ginger and water in a medium pot with a pinch of salt. Bring it to the boil on the hob, then put the lid on and simmer on a low heat for about 15 minutes, until the squash is tender.

    2. Stir in the oats and cook for 5-6 minutes, stirring often, until the porridge turns thick and creamy.

    3. Stir through the soy sauce, taste, and add salt and pepper if it needs it.

    4. Spoon it into bowls while hot. Scatter spring onion over each one and drizzle with the toasted sesame oil.
