    Ingredients

    Amounts for
    • 2 wholemeal tortilla wraps
    • 2 ½ tsp olive oil, for brushing
    • 95g roasted red pepper, chopped
    • 2 tomatoes, chopped
    • 2 ½ tbsp tomato puree
    • 2g fresh dill, chopped
    • 4g fresh parsley, chopped
    • 2 eggs
    • 80g rocket, to serve
    • ⅔ red onion, very thinly sliced

    Method

    1. Get the oven heating to 200°C (fan 180°C). Brush a little olive oil over each tortilla, set them out on baking sheets and give them 3 minutes in the oven to start crisping.

    2. Meanwhile, make the topping: season the tomato purée in a bowl and stir in the parsley and dill. Chop the tomato and roasted red pepper and add them too.

    3. Flip the tortillas over. Spread the topping across them, but keep big chunks of pepper and tomato out of the middle, where the egg needs a flat spot to sit.

    4. Crack an egg onto the middle of each tortilla. Bake for 10 minutes more, until the edges are crisp and the egg has only just set.

    5. Top each one with the sliced red onion and a pile of rocket.
