    Ingredients

    Amounts for
    • 1 Italian chicken sausage, casings removed
    • 8 eggs
    • 110g cottage cheese
    • 50g Parmesan, grated
    • 30g spinach, chopped
    • ¾ tsp salt
    • 2 tsp rapeseed oil, for the pan

    Method

    1. Heat the oven to 180°C (fan 160°C), with a shelf near the top.

    2. Brush a 25cm frying pan with the rapeseed oil. Check the handle is ovenproof, because the pan finishes in the oven.

    3. In a bowl, whisk the eggs with the cottage cheese, Parmesan, spinach and salt, plus a good grind of black pepper. Leave this to one side.

    4. Squeeze the sausage out of its casing into the pan and set it over a medium heat on the hob. Break the meat into small pieces as it cooks for about 4 minutes, until it is browned through.

    5. Pour the egg mixture over the sausage and give it 1 minute on the heat, so the base sets.

    6. Move the pan to the oven for 16-18 minutes. Take it out once the top is just set.

    7. Slide the frittata onto a board with a spatula. Cut it in half and serve warm.
