Ingredients
- 280g jasmine rice
- 1 clove of garlic, minced
- ¾ tsp salt
- 370ml coconut milk
- 250ml water
- 590g chicken breast, cut into 2-3cm pieces
- 1 tbsp vegetable oil
- 16 tbsp sweet chilli sauce
- 140g tinned pineapple (drained weight)
- 450g broccoli, cut into small florets
- 2 stems of spring onion, sliced
Method
Put the rice, garlic, salt, coconut milk and water in a lidded pan and bring to the boil. Lower the heat and simmer, covered, for 15 minutes, then turn off the heat and leave it covered for 5 minutes. Cook only enough for the portions you're eating now, and cook it fresh when you eat the leftovers.
Meanwhile, cut the chicken into 2-3cm pieces and the broccoli into small florets.
Heat the oil in a large frying pan over a medium-high heat. Fry the chicken for 6-8 minutes, stirring, until browned and cooked through.
Add the broccoli and a splash of water, cover and cook for 3-4 minutes, until bright green and just tender.
Stir in the pineapple and sweet chilli sauce and bubble for 2 minutes, until hot.
Fluff the rice with a fork and share it between bowls. Top with the chicken and broccoli and scatter over the spring onion.
