    Ingredients

    Amounts for
    • 2 ¼ eggs, lightly beaten
    • 280ml tomato passata
    • 70g oats
    • ½ onion, finely chopped
    • 790g lean beef mince
    • 5 tbsp tomato ketchup, for the glaze
    • 3 ½ tbsp brown sugar, for the glaze
    • 1 tsp mustard powder, for the glaze
    • 870g potato, peeled and diced
    • 3 ½ tbsp olive oil
    • ½ tsp garlic salt
    • 530g asparagus, trimmed and halved

    Method

    1. Heat the oven to 220°C (fan 200°C).

    2. Lightly beat the egg in a large bowl. Stir in the oats, onion and passata with a pinch of salt, then add the beef mince. Work it in gently with your fingertips and stop once it is just combined, because overworked mince gives a dense loaf.

    3. Split the mixture into 6 even pieces and pat each one into a small loaf. Set them on a large roasting tray with space between them.

    4. Stir the ketchup, brown sugar and mustard powder into a glaze. Brush it over the tops of the loaves.

    5. Put the potato in first, because it takes the longest. Coat it in two thirds of the oil, half the garlic salt and some black pepper. Arrange it around the loaves in one layer, then bake for 25 minutes.

    6. Coat the asparagus in what is left of the oil and garlic salt and add it to the tray. Give everything a further 15-20 minutes in the oven. Take the tray out only once the meatloaves are cooked through and the vegetables are tender.

    7. Let the meatloaves sit for 5 minutes, so they slice cleanly.
