    Ingredients

    Amounts for
    • 1 ½ tbsp olive oil
    • 1 ½ onions, diced
    • 3 ¼ cloves of garlic, minced
    • 3 ¼ tbsp tomato paste
    • 1.2kg diced tomatoes
    • 250g sweetcorn, frozen
    • 350g butter beans
    • 680g potato, peeled and diced
    • 12 tbsp BBQ sauce
    • 840g cooked chicken, shredded
    • 1.1l chicken stock

    Method

    1. Put a large pot on the hob over a medium heat and pour in the olive oil. Add the garlic and onion and give them a few minutes.

    2. Once the onion turns translucent, stir a pinch of black pepper and the tomato paste into the pot. Cook for 45 seconds, until the paste darkens and smells fragrant.

    3. Now add the BBQ sauce, potato, butter beans, sweetcorn and diced tomatoes, and mix. Follow with the chicken stock and shredded chicken, stirring until it all comes together well.

    4. Once the stew boils, turn the heat down to a gentle simmer for 20 minutes. Check a piece of potato: it should be tender. Taste, add salt and pepper as needed, and serve.
