    Ingredients

    Amounts for
    • 1 ½ tbsp olive oil
    • 1 onion, finely chopped
    • 2 cloves of garlic, minced
    • 1 red pepper, cut into strips
    • 480g chickpeas (drained weight)
    • 400ml coconut milk, full-fat
    • 400g chopped tomatoes
    • 240ml vegetable stock
    • 1 tbsp paprika
    • 1 tbsp ground cumin
    • ¾ tsp cayenne pepper
    • 1 ½ tsp sugar
    • 50g spinach
    • 4g fresh coriander, roughly chopped
    • 1 tbsp lime juice
    • 300g basmati rice, to serve

    Method

    1. Put a large pot on the hob over a high heat and add the olive oil. Once it is hot, add the onion and garlic and cook for 1 minute.

    2. Stir in the red pepper and cook for 2 minutes, until the onion is translucent and golden at the edges.

    3. Now add the paprika, cumin, cayenne and sugar, followed by the chopped tomatoes, chickpeas, vegetable stock and coconut milk. Stir and bring it up to a simmer, then turn the heat down until it is bubbling gently.

    4. Leave it bubbling gently for 12-15 minutes. By then the sauce should have turned orange red, with no pale pink left.

    5. While the curry simmers, boil the basmati rice in salted water until tender, then drain it.

    6. Stir the spinach through until it wilts. Finish with the coriander and lime juice, season to taste, then spoon the curry over the rice.
