    Ingredients

    Amounts for
    • 560g chicken thigh
    • 2 lemons, one sliced, one juiced
    • 5 tbsp olive oil, for the sauce
    • 5 tbsp honey, for the sauce
    • 3 tbsp Dijon mustard, for the sauce
    • 4 cloves of garlic, minced
    • 1 tsp paprika, for the sauce
    • 100ml water, for the tray
    • 230g green beans, trimmed
    • 1 ¾ bell peppers, sliced into rings
    • 1.2kg potato, halved, to roast alongside

    Method

    1. Grease a large roasting tray while your oven heats to 220°C (fan 200°C).

    2. Season the chicken thighs and arrange them in it, with halved potatoes tucked round them so everything roasts together.

    3. Cover the chicken with thin slices from one lemon. Squeeze the juice from the other lemon into a bowl, for the sauce.

    4. Whisk the paprika, garlic, mustard, honey and olive oil into the juice. Keep half this sauce back for the vegetables and spoon the rest over the chicken.

    5. Add the water to the tray so the juices don't catch, then bake for 25 minutes.

    6. Coat the pepper rings and green beans in the saved sauce, season them, and tuck them round the chicken.

    7. Give it 15-20 minutes more in the oven. Before you serve, check the beans are tender and the chicken is cooked through.
