    Ingredients

    Amounts for
    • 230g spaghetti, broken in half
    • 3 tbsp peanut butter
    • 1 tbsp brown sugar
    • 1 clove of garlic, minced
    • fresh ginger, grated
    • 1 lime, juiced
    • 2 tsp soy sauce
    • 4 tbsp rapeseed oil
    • 290g red cabbage, finely shredded
    • 2 carrots, coarsely grated
    • 10g fresh coriander, roughly chopped
    • 4 stems of spring onion, sliced
    • 70g peanuts, roughly chopped

    Method

    1. Make a smooth dressing by whisking the rapeseed oil, soy sauce, lime juice, ginger and garlic into the peanut butter and brown sugar. Set it aside.

    2. Snap the spaghetti in half and cook it in a large pan of boiling water on the hob until tender.

    3. Tip it into a colander and cool it under the cold tap. Shake the colander until it stops dripping.

    4. While the spaghetti cools, slice the spring onion and roughly chop the coriander and peanuts. Finely shred the red cabbage and coarsely grate the carrot too.

    5. Put the cold spaghetti in a large bowl with everything you have just prepared and toss it all together.

    6. To eat now, pour over the dressing and mix it through. For a packed lunch, box it up with the dressing on the side, and keep it for up to 4 days.
