    Ingredients

    Amounts for
    • 1 tbsp olive oil
    • 2 cloves of garlic, minced
    • 1 onion, finely chopped
    • 1 red pepper, chopped
    • 500g beef mince
    • 800g chopped tomatoes
    • 240g kidney beans (drained weight)
    • 600ml beef stock
    • 250g macaroni
    • 200g Cheddar cheese, grated
    • 5g fresh coriander, finely chopped
    • ½ tsp cayenne pepper
    • 2 tsp paprika
    • 2 tsp ground cumin
    • 1 ½ tsp onion powder
    • 1 tsp dried oregano

    Method

    1. Set a large pot over a high heat on the hob with the olive oil, and tip in the onion and garlic. Add the red pepper once they have had 1 minute, then cook until the onion turns translucent.

    2. Now brown the beef mince. Add it to the pot, using a spoon to break up any lumps, and cook until no red is left.

    3. Tip in the macaroni, beef stock, kidney beans and chopped tomatoes. Stir in the oregano, onion powder, cumin, paprika and cayenne, then drop the heat to medium as soon as it starts to simmer.

    4. Cover and cook for 12 minutes, until the macaroni is al dente and coated in sauce, not swimming in it.

    5. Leave the pot where it is on the hob, but switch off the heat. Stir half the cheddar through, then taste and season with salt and pepper.

    6. To melt the rest of the cheddar on top, scatter it over, cover again and wait 2 minutes.

    7. Finish with a scattering of coriander and eat straight away.
