    Ingredients

    Amounts for
    • 65g butter, softened
    • 750g green beans, trimmed
    • 2 ¼ tbsp olive oil
    • 750g potato, halved
    • 1.2kg pork loin, patted dry
    • 9 tbsp teriyaki sauce

    Method

    1. Season the butter with salt and pepper and leave it out to soften while the oven heats to 230°C (fan 210°C).

    2. Take a large roasting tray. Toss the green beans in half the olive oil with some salt and pepper and lay them along one side.

    3. Lay the potatoes down the other side, coated in the rest of the oil and seasoned the same way.

    4. Pat the pork loin dry with kitchen paper, brush the teriyaki sauce all over it and lay it on the beans.

    5. Cook the pork in the oven for 25-30 minutes, until cooked through.

    6. Rest the pork on a board under a loose cover of foil, with a third of the seasoned butter on top.

    7. Give the vegetables a stir, then return the tray to the oven for about 10 more minutes, until tender and lightly browned. Stir the rest of the butter through them at the end.

    8. Slice the pork and serve it with the vegetables, spooning the pan juices over.
