    Ingredients

    Amounts for
    • 1.1kg sweet potato, peeled and diced
    • 1 ½ red peppers, diced
    • 1 ½ onions, diced
    • 2 ¼ tbsp olive oil
    • 1 ½ tsp chilli powder
    • ¾ tsp ground cumin
    • ¾ tsp garlic granules
    • ⅓ tsp black pepper, freshly cracked
    • ⅓ tsp smoked paprika
    • 240g black beans (drained weight), rinsed
    • 400g chopped tomatoes
    • 210g kale, chopped
    • 4g fresh coriander, chopped

    Method

    1. Dice the onion and red pepper. Peel the sweet potato, then cut it into small cubes.

    2. Fry the sweet potato in the olive oil over a medium heat, using a large frying pan on the hob, for about 8 minutes, until browned and caramelised, stirring only occasionally.

    3. Add the onion and red pepper, then the smoked paprika, garlic granules, cumin and chilli powder. Season with a pinch of salt and some black pepper, stir, and cook for 3 more minutes.

    4. Add the kale, chopped tomatoes and black beans, and cook for 2-3 minutes, until the sweet potato is tender and the kale wilted. If it looks dry, splash in some water.

    5. Finish with the coriander scattered over. If you are packing it, let it cool first, then keep it in the fridge for up to 4 days.
