Ingredients
- 4 stems of spring onion, sliced on a bias
- 700g udon
- 4g fresh ginger, grated
- 3 ¾ cloves of garlic, grated
- 60g tahini
- 2 ½ tbsp light soy sauce
- ⅔ tbsp dark soy sauce
- ⅔ tbsp maple syrup
- ⅔ tbsp rice vinegar
- 1 ¼ tbsp toasted sesame oil
- 1 ¼ tbsp hot chilli sauce
- 210g edamame, shelled
- 1 ¼ bell peppers, thinly sliced
- 180g cucumber, finely diced
- 45g roasted peanuts, chopped
- 2 ½ tbsp sesame seeds
Method
Sit the sliced spring onion in a bowl of cold water for 10 minutes to mellow it, then drain and pat it dry. Meanwhile, fill a large pan with water and set it on the hob to boil.
While the water heats, whisk the tahini with the hot chilli sauce, toasted sesame oil, rice vinegar, maple syrup, dark soy sauce, light soy sauce, garlic and ginger. Keep whisking until smooth, breaking up any lumps of paste.
Once the water boils, cook the udon as the packet directs. Save a little of the cooking water, then drain the noodles and rinse them under the cold tap until cool.
Sprinkle a pinch of salt over the edamame.
In a large bowl, toss the cool noodles with the sesame sauce, adding a splash of the saved water to loosen the sauce so it coats them evenly.
Add the edamame, cucumber, bell pepper and drained spring onion, and toss once more.
To serve, scatter over the sesame seeds and roasted peanuts.
