    Ingredients

    Amounts for
    • 100g noodles, wholemeal
    • 2 ½ tsp sesame oil
    • 240g beef sirloin, fat removed and cut into strips
    • 1 ¼ red onions, finely chopped
    • 20g fresh ginger, peeled and finely chopped
    • 190g mushrooms, chestnut, thickly sliced
    • 2 ½ cloves of garlic, finely chopped
    • 190g beansprouts
    • 1 ¾ tsp soy sauce, tamari
    • 1 ¼ tbsp rice vinegar
    • 5 stems of spring onion, cut into diagonal lengths

    Method

    1. Cook the noodles for the time given on the packet, then drain them well.

    2. While the noodles cook, get a wok very hot on the hob over a high heat and pour in half the sesame oil. Add the beef and keep it moving until it browns, which takes only 30 seconds, then lift it out onto a plate.

    3. Pour the rest of the oil into the wok and stir-fry the ginger and red onion until they have softened. Add a splash of water if the wok starts to look dry.

    4. Toss in the garlic and mushrooms and fry for about 3 minutes, until the mushrooms are just turning soft. Give the beansprouts a final 1-2 minutes in the wok, so the whole lot is piping hot.

    5. Stir 2 tbsp of water into the soy sauce and rice vinegar.

    6. Toss the drained noodles through the vegetables. Pour the soy mixture over, scatter in the spring onion and return the beef to the wok. Stir-fry it all for a few more minutes, until everything is hot all the way through, then season well with black pepper.
