    Ingredients

    Amounts for
    • 360g Italian sausage, removed from casings
    • 1 ¼ shallots, chopped
    • 3 ¼ cloves of garlic, minced
    • 1 ½ tsp Italian seasoning
    • 450g diced tomatoes
    • 260ml single cream
    • 360g gnocchi
    • 130g spinach, roughly chopped
    • 120g mozzarella cheese, grated

    Method

    1. Over a medium-high heat on the hob, brown the sausage and shallot in a large frying pan, breaking the meat apart as it colours.

    2. Stir in the Italian seasoning and garlic for 1-2 minutes, until they smell fragrant.

    3. Tip in the gnocchi, single cream and diced tomatoes, stir, and let it come up to a simmer.

    4. Turn the heat down to medium and give it 7-8 minutes at a simmer, with a stir every so often, until the gnocchi is nearly tender. If the sauce gets too thick, a splash of water will loosen it.

    5. Stir in the spinach and cook for 1-2 minutes, until it has wilted and the gnocchi is tender.

    6. Stir the mozzarella through off the heat until it has melted, then serve.
