Ingredients
- 150g chicken breast, finely chopped
- 1 egg
- 2 tbsp vegetable oil, for frying the egg
- 1 tbsp vegetable oil, for the stir fry
- 5 cloves of garlic, roughly pounded
- 4 Thai chillies, pounded
- 1 tsp oyster sauce
- ½ tsp light soy sauce
- ½ tsp dark soy sauce
- ½ tsp sugar
- 15g Thai basil, leaves picked
- 75g jasmine rice, to serve
Method
Cook the jasmine rice following the packet instructions, then keep it warm.
While the rice cooks, pound the garlic and Thai chillies together. Stop at a rough paste with a few uneven pieces left in it.
Heat the oil for the egg in a small frying pan on the hob until it shimmers. Crack in the egg and fry until the white blisters and turns crisp at the edges while the yolk stays soft. Lift it out and set aside.
Get a wok very hot and add the rest of the oil. Stir in the garlic and chilli paste for 15 seconds.
Tip in the chicken and keep it moving over the highest heat, until it is cooked through and lightly caught in places.
Add the oyster sauce, light soy sauce, dark soy sauce and sugar. Toss for 30 seconds so everything is coated.
Turn off the heat and fold in the Thai basil until it just wilts. Spoon over the rice and top with the fried egg.
