    Ingredients

    Amounts for
    • 1.4kg potato, cut into chunks
    • 1 ½ onions, coarsely chopped
    • 3 ¼ tbsp olive oil
    • 4 cloves of garlic, minced
    • ¾ tsp paprika
    • 880g chicken thigh, skin removed
    • 290g spinach

    Method

    1. Start by turning the oven on at 220°C (fan 200°C).

    2. Tip the onion and potato onto a large roasting tray. Add the garlic and olive oil with plenty of salt and pepper, toss well and spread everything out.

    3. Stir a pinch of salt into the paprika to make a rub. Coat the chicken thighs all over with it and lay them on the vegetables.

    4. Roast for 35-40 minutes, until the potatoes are just tender and the chicken is cooked through.

    5. Lift the chicken off and keep it warm on a plate. Heap the spinach over the vegetables and slide the tray back into the oven for another 8-10 minutes, until the spinach has wilted and the potatoes are completely tender.

    6. Mix the wilted spinach through the potatoes and onion, and plate up with the chicken.
